Recipes for Kids With Cystic Fibrosis

Enchilada Casserole

Note: This high-calorie recipe is especially for kids with cystic fibrosis (CF), who may need additional calories to meet their nutritional needs.

This scrumptious meal is loaded with calories, protein, and sodium.

Prep time: 40 minutes


  • vegetable oil or nonstick cooking spray to grease pan
  • 1 10.75-ounce can of cream of mushroom soup
  • 1 15-ounce can of enchilada sauce
  • 2 cups cooked chicken breast, diced
  • 1 cup cheddar cheese, grated
  • 2 cups tortilla chips, crushed


  • oven (you’ll need help from your adult assistant)
  • large bowl
  • mixing spoon
  • 1.5-quart casserole dish


  1. Preheat oven to 375ºF (218ºC). Grease casserole dish with cooking spray or small amount of vegetable oil.
  2. Place all ingredients in a large bowl and mix well.
  3. Pour the mixture in greased casserole dish.
  4. Bake for 25 minutes.
